Thanksgiving and Christmas being the two we focused on. Thankfully and as luck would have it, we are able to take 6 days off for thanksgiving and only need to use 2 days of our time.
Then for Christmas, well New Years as well, we were able to take 12 days and only use 6 days! Really cool because Cicely needs to save time so she has it when baby arrives and for me I just need to use time. I always manage to have 6 weeks available and I don't want to end up losing time when I hit 240 hours now that we cap out at that point.
So yea today is our Monday and Thursday all wrapped into one. Then tomorrow will of course be our Tuesday that is Friday - love it! Just need to make sure we get enough done in two days to avoid walking back into a storm. Should not be an issue. Most will be out this week anyhow so I have a feeling the studio will be fairly quiet.
Awesome Dinner (as usual)
So last night Cicely decided to make us this new vegetarian recipe for dinner. Holy crap was it tasty! I had to stop myself from getting a huge serving of seconds!
What was this amazing dinner you ask? It was coconut jasmine rice with bok choy, cashews & raisins. I know it does not sound like some amazing crazy creation but it was crazy good that's for sure.
It's fairly simple to make as well just a lot of preparation. To make it you only need garlic, cilantro, bok choy, ginger, lime, cashews, jasmine rice, coconut milk, shredded coconut, and golden raisins. Once all of the chopping and other preparation is done like browning the coconut it takes about 20 to 25 minutes to cook and that is it.
Running at only 650 cal per serving it's actually a great meal to fill up on. For a meatless dish it tasted very "meaty" and was super filling. Can't wait to have it for lunch today.
We were both bad though and cut into the cherry pie. Yep, we could not wait until Thanksgiving to do so. The picture below shows the proof. It was really good, but for not eating that type of food very often, holy shxt was it rich. We actually have one entire pie that we will have to cut into on Thanksgiving but it is a peach pie. We decided to go a little different than the normal pumpkin this year and go with fruit pies.
Now we just need to figure out how to eat them without packing on 10 pounds of holiday eating waistline pounds. That is exactly what I don't need. The holidays in general already mean that I have to spend more time on the treadmill and elliptical doing cardio exercises to avoid the pants shrinking syndrome.
No Power, WTF?
Heading to work today I punched the accelerator pedal to the floor when pulling out into to traffic no less and nothing happened, Ahhh! No Vroom what so ever! This happened long ago when I first got the car and it was a simple upgrade with the computer. For some reason it was telling the engine to chill out and not worry about that silly extra couple hundred horsepower and turbo charger.
So this meant a quick trip to the car dealership on the way into work to drop off the car to be looked at. Then wait for the shuttle and get a quick lift into the office. So much for a smooth sailing day I guess. But hey, at least they were able to get me in right away and have it looked at. Whats more is that it is not Thanksgiving yet so it did not happen on a worse day or when we were down in Carson visiting mom. Yep, could have been worse so I am thankful it was today I guess.
Now, I just hope that this time it is something as simple as a computer upgrade. Guess I will find out later today when they call for us for the status update and find out if they were able to get the problem identified and resolved. Fingers and toes crossed for luck!
**Update: Nope, could not get the car fixed / figured out today so it's back into the shop first thing in the morning so they can have it for another day and see what they can find. I am pretty certain it has something to do with the turbo or related but who knows. I sure hope it's not a case of bad fuel in the tank or something? Doubt it because when Cicely filled it up last night after grocery shopping it was still at 1/2 tank. I would think that it would take much more than that to cause issues. No matter, nothing to cry over - it's all under warranty just more of a hassle than anything else and even then the hassle is minimal. Could be worse. Hopefully some good news tomorrow about it!

Focus
Okay that will do it for today. Not much else to write about. Just happy it is a short week and that we will get some time at home and multiple days all lumped in a row. It will be bittersweet when we have to go back to work next Tuesday, but hey, not thinking about that right now or I will miss all the good stuff in-between. For now I play to enjoy what is in front of me.

Photo: Pac Man cherry pie! This is the result from opening a pie to only "smell it" and taste the filling that had spilled out the edge of the crust while in the box on the way home. Yea it was supposed to be saved for turkey day. But once open it was so tempting that we had to dive in and pig out on a couple pieces early. It was worth it, so good!
